WHere is a simplified version of a cocktail from a new drinks list. It's a batch pre-mixed that is loaded with tastes of the Christmas time, making it ideal for your festive gathering. Any leftover citrus syrup for morning drinks, desserts, or to mix another batch of the drink.
The Bikini Cocktail
Yields 10 guests
To make the Clementine Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Premix (makes 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Instructions
Making the Cordial: Place all the items inside a pot, bring to a simmer, agitating so the sugar melts. Then, turn off the heat and let it to cool fully. Decant into an sterilised bottle, seal and store in the refrigerator, it can be stored for up to a month.
To make Premix: Mix all the liquid ingredients in a large bottle, let it rest for one hour, then filter it preferably using a fine cloth, making it fully clarified.
When ready to serve: Pour 85ml of the premix into a cocktail shaker containing ice, and agitate carefully for one minute until cold. Strain to a frosted cocktail glass or similar, garnish with some cranberries adding the final touch by giving it a quick spritz of the essential oil over the top.
